In a saucepan, whisk together egg, sugar, vanilla, and flour. Stir in a splash of milk, then add the rest of the milk.

Over medium heat, stir constantly until the mixture thickens. Let it cook for 1 minute, remove from heat, and fold in the butter. Blitz with an immersion blender or strain through a sieve if needed. Cover with plastic wrap directly on the surface and chill.

Mix flour, sugar, and yeast in one bowl. In another, combine warm milk, egg, and melted butter. Knead into a soft dough and work it for 10 minutes. Let it rise in a warm spot for 1 hour.

Rub together flour, powdered sugar, and cold butter with your fingers until you get breadcrumb-like streusel.

Toss berries with cornstarch if using tart varieties. Blueberries can go in as is.

Divide dough into 6 pieces and shape into balls. Cover and rest for 15 minutes.

Press a cup into each ball to create a well. Brush with an egg-milk wash. Sprinkle with streusel, add a dollop of cream, berries, and a pinch more crumble on top.

Bake at 350°F (180°C) for about 25 minutes until golden.
