Method

Combine the yeast, a spoonful of flour, a spoonful of sugar, and warm milk. Leave in a warm spot until it bubbles up.

Whisk together the eggs, yolks, sugar, salt, and vanilla. Stir in the puréed cottage cheese (make sure to blend it smooth), softened butter, and the sponge. Mix well.

Gradually fold in the flour, adjusting as needed for the dough. The dough should be soft and slightly tacky. Gently knead in the raisins at the very end.

Cover the dough and let it rise in a warm place for 1.5 to 2 hours. It should triple in volume.

Fill the baking molds about one-third full with the dough. Let it rise almost to the rims.

Bake at 180–190°C (350–375°F) for 50–70 minutes. Do not open the oven door for the first 20 minutes. Test for doneness with a wooden skewer.

Cool the kulich on its side so it stays moist and doesn't deflate.
