Pour water and milk into a saucepan, add butter, salt, and sugar. Heat over medium heat, stirring, until it comes to a boil.

Remove from heat and stir in the flour. Return to the stovetop and cook the dough until a light film forms on the bottom of the pan. Let it cool until lukewarm.

Gradually beat the eggs into the cooled dough using a mixer—the dough is ready when it forms a smooth, drooping V-shape from the spatula without breaking.

Transfer the dough into a piping bag and pipe 6 neat rings onto a parchment-lined baking sheet.

Bake at 180°C (350°F) for 25–30 minutes until crisp and golden brown. Do not open the oven door during the first 20 minutes.

For the filling, whip the softened butter with cottage cheese, add powdered sugar and vanilla, and blend until completely smooth.

Let the pastry shells cool, then slice each ring in half horizontally. Pipe the cream inside, add a spoonful of dulce de leche right in the center, put the top back on, and dust with powdered sugar.
