Cold Soba from My Hero Academia

Method

Combine the sake and mirin in a small saucepan, bring to a boil, and simmer for 1–2 minutes to cook off the alcohol.

Add the soy sauce and kombu. Heat almost to a boil, but do not let it boil.

Remove from heat, stir in the bonito flakes, and let steep for 5–10 minutes.

Strain the sauce and let it cool completely.

Cook the noodles according to the package instructions.

Immediately transfer them to an ice bath to stop the cooking process.

Rinse thoroughly by hand under cold water to remove excess starch. Drain well in a colander until all water has dripped out.

For cold soba, combine 50 ml of mentsuyu and 50 ml of cold water (a 1:1 ratio).

Place grated garlic, grated ginger, and chopped green onions into a separate small bowl.

Plate the chilled soba, add the garnishes, and serve alongside the chilled mentsuyu dipping sauce.
