Method

Boil the potatoes in salted water for 20–25 minutes until tender.

Melt half of the butter in a skillet. Add the leeks and cook over medium heat for 20–25 minutes until soft and slightly caramelized. Splash in a little broth if needed.

Fold in the cabbage, season with salt, and cook for another 5–7 minutes until tender.

Drain the potatoes and mash them.

Add the remaining butter, milk, cheese, salt, and pepper.

Combine the potatoes with the cabbage and leeks, and gently mix everything together.

Top with a dollop of butter and a few reserved pan-fried leeks.
