Method
Cover the chicken with cold water and bring to a boil. To keep the broth lighter on fat, use skinless meat.
If you're using a broiler chicken, you can drain the water after it comes to a boil and start fresh.
While it cooks, peel the onion and carrots. Cut the onion in half leaving the skin on, and char it along with the carrots in a dry skillet—this will give the broth a richer color.
Once it boils, reduce the heat.
Add the onion, carrots, ginger, garlic, bay leaf, cloves, peppercorns, and herbs.
Simmer on low heat for 30 minutes, or at least an hour if using a farm-raised chicken.
Strain the finished broth.
