Classic Lecho without Carrots and Onions
A classic homemade preserve made from ripe tomatoes and bell peppers with garlic, which keeps wonderfully through the winter.

Method
Wash and dry the tomatoes, remove the stem cores, and cut them into wedges.
Blend the tomatoes until completely smooth.
Core and seed the bell peppers, then slice them into strips.
Place the peppers in a pot, pour in the tomato puree, and add salt, sugar, and vegetable oil.
Simmer over low heat for 40 minutes.
At the end, stir in the grated garlic and vinegar, bring to a boil, and remove from the heat.
Ladle the lecho into sterilized jars, seal them tightly, flip them upside down, and wrap in a blanket for 24 hours.
Store in a pantry or cellar.
