Chunky Apple Jam in a Tender Puree
Homemade apple jam featuring translucent apple pieces and a hint of cinnamon suspended in an airy puree. Perfect with tea, crepes, or as a baking filling.

Method
Wash the apples, cut them into quarters, remove the cores, and peel them.
Divide the apples in half. Blend one half with an immersion blender until smooth, and dice the other half finely.
Transfer the puree into a preserving pot or saucepan, add the sugar, stir, and bring to a boil.
Add the lemon zest and simmer, stirring constantly, for about 5 minutes.
Drop the diced apples into the boiling puree, stir, bring back to a boil, and mix in the cinnamon.
Simmer everything together over medium heat for another 15 minutes, stirring occasionally.
Ladle the hot jam into dry, sterilized jars, seal tightly, and invert for 5 minutes.
