Method

Prepare the dough: bring water to a boil with butter, salt, and sugar, stir in the flour, mix thoroughly, and cook for 1-2 minutes until it pulls away from the sides of the pan.

Let it cool slightly, then beat in the eggs one at a time until smooth and glossy.

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

Pipe rings onto the sheet using a pastry bag.

Bake for 10 minutes at 200°C, then for 20-25 minutes at 180°C (350°F). Let them cool.

Make the cream: whisk egg yolks with sugar and flour, and stir in a splash of milk. Pour into boiling milk and cook until thickened. Stir in vanilla and let cool with plastic wrap pressed onto the surface.

Fill the rings with the cream.

Top with a glaze made of powdered sugar and lemon juice.

Chill before serving.
