Chocolate Paskha with Dates

Method

Soak the dates in hot water for 10 minutes. Drain the water and pit them.

Melt the coconut oil.

Combine the curd cheese with the soft quark, melted oil, pitted dates, and sifted cocoa powder. Blend thoroughly with an immersion blender.

Line a traditional pyramidal paskha mold with cheesecloth. Transfer the curd mixture into the mold and fold the ends of the cheesecloth over the top.

Place the mold on a plate or in a bowl, as excess whey will drain out. Place a weight on top.

Refrigerate the mold with the weight for 12 hours.

Unfold the cheesecloth, invert the mold onto a serving dish, and carefully peel away the cheesecloth. Garnish with grated dark chocolate before serving.
