Chocolate-Coated Apple Marshmallows

Delicate homemade apple marshmallows made with agar-agar and coated in a rich chocolate glaze. A wonderful sweet treat to enjoy with tea.

Method

Peel and core the apples, then chop them up.

Combine the apples in a saucepan with a tablespoon of water and 100g of sugar. Simmer for 5 minutes.

Transfer to a bowl and blend until smooth.

Mix 150 ml of water, 200 g of sugar, and the agar-agar. Bring to a boil and let simmer over medium heat for 5 minutes.

Using a mixer, whip the chilled puree with the egg white until stiff peaks form.

Pour in the syrup in a thin, steady stream. Whip everything together for 3 minutes.

Transfer the mixture to a piping bag. Pipe onto a parchment-lined baking sheet. Leave at room temperature for 10 hours.

Melt the chocolate in a water bath. Stir in the butter.

Dip the marshmallows into the warm chocolate one by one to coat evenly. Let them set on the parchment paper for about another hour.
