Chocolate-Coated Apple Marshmallows

Delicate homemade apple marshmallows made with agar-agar and coated in a rich chocolate glaze. A fantastic tea-time treat for sweet tooths.

Method

Peel the apples, remove the cores, and cut them into pieces.

In a saucepan, combine the apples, 1 tbsp water, and 100 g sugar. Simmer for 5 minutes.

Transfer to a bowl and blend until smooth.

In a separate container, mix 150 ml water, 200 g sugar, and the agar-agar. Bring to a boil and cook for 5 minutes.

Let the purée cool, add the egg white, and beat with a mixer until stiff peaks form.

Pour in the hot syrup in a thin stream while continuing to whip for 3 minutes.

Transfer the mixture to a piping bag and pipe onto parchment paper. Leave to dry for 10 hours at room temperature.

Melt the chocolate in a water bath and stir in the butter.

Dip each marshmallow one by one and place them on parchment paper. Let them set for an hour.
