Method

Beat the softened butter or margarine with sugar using a mixer until light and fluffy, then add the egg and vanilla and beat again.

Next, add the flour, cocoa powder, baking soda, and salt, and mix again with the mixer.

Optionally, you can also fold in grated chocolate.

The dough will be sticky. Chill it in the fridge for an hour, or drop it by spoonfuls onto a greased baking sheet (or one lined with parchment paper).

Roll the chilled dough into 1.2-inch (3 cm) balls, place them on the baking sheet, and press down slightly with your hand.

Bake for 8-10 minutes in a preheated oven at 350°F (180°C) until the edges are set.

Remove from the oven and let rest on the baking sheet for 5 minutes. Then carefully transfer them to a wire rack to cool completely. Let them cool thoroughly; they will deflate slightly and firm up as they cool.
