Chicken Roulades with Basil and Nuts
Fragrant chicken roulades stuffed with nuts, cheese, and fresh herbs, baked on a bed of oranges.

Method
Slice the chicken breasts lengthwise into 1 cm thick cutlets. Pound them out, season with salt and pepper, and set aside to marinate.
Prepare the sauce. Place the garlic, cheese, herbs, nuts, chili pepper (if you like some heat), oil, salt, and pepper into a blender bowl, and blend until smooth. You will get a thick sauce.
Arrange the sliced oranges in rings at the bottom of a greased baking dish.
Spread the sauce over the chicken cutlets and roll them up tightly.
Place the roulades seam-side down in the dish on top of the orange 'bed'. Make sure the roulades fit snugly against each other.
Drizzle the remaining orange juice and a little oil over the top.
Bake in a preheated oven at 180°C (350°F) for half an hour.
