Chicken in Sour Cream Sauce
A hearty and juicy dish of chicken thighs baked in a tender sour cream sauce with cheese and spices. Pairs wonderfully with mashed potatoes, rice, or a light salad.

Method
Prep the thighs: remove skin/bones if necessary, and pat dry with paper towels. Season with salt, pepper, and a dusting of paprika.
Light dredging: toss the pieces in flour — this creates a crust and slightly thickens the sauce as it bakes.
Sear the thighs in a preheated skillet for 3–4 minutes per side until lightly golden (fully cooking through at this stage isn't necessary).
Make the sauce: combine sour cream, egg, cornstarch, salt, and pepper. Stir in the grated cheese (save half for the topping) along with minced garlic and herbs if desired.
Arrange the seared thighs in a baking dish. Pour the sour cream mixture evenly over them. Sprinkle the remaining cheese on top.
Bake in a preheated oven at 180°C (350°F) for 30–40 minutes until the sauce sets and the chicken is cooked through (internal temp ~75°C/165°F).
Let the dish rest for 5–7 minutes, garnish with fresh herbs, and serve with your choice of side: mashed potatoes, rice, or a light salad.
