Prepare the breasts: slice lengthwise into portioned cutlets (or cut in half for thinner cutlets), and gently pound them through plastic wrap to an even thickness.

Marinade: mix soy sauce, sour cream, eggs, starch, and spices to get a slightly thick consistency.

Marinating: submerge the cutlets in the marinade, coat them well on all sides, and let rest for 15–30 minutes (or longer in the refrigerator).

Preparation for frying: heat a skillet with oil over medium heat. Shake off excess marinade, but do not rinse—the starch will help the crust set and turn golden brown.

Frying: pan-fry the cutlets for 3–4 minutes per side until golden brown and cooked through (timing depends on thickness). If necessary, cover with a lid for 1–2 minutes to ensure the inside is fully cooked.

Resting: transfer the finished cutlets to a paper towel for 1–2 minutes to remove excess oil. Serve hot.
