Method
Slice each chicken breast horizontally into 2 fillets. Season with salt and spices, then gently pound them out.
Finely grate the cheese and mix with the flour. Beat the eggs in a separate bowl.
Drench the chicken first in the beaten eggs, then coat thoroughly in the cheese-flour mixture. Pan-fry in preheated vegetable oil for 3-4 minutes per side.
Chop the onion and garlic, sauté briefly in a pan, then add the mushrooms and cook until all excess liquid evaporates. Season with salt and spices to taste.
Transfer the fried chicken to paper towels to drain excess oil, then place on a baking sheet. Spread a thin layer of sour cream or mayonnaise mixed with finely chopped herbs over each piece.
Layer the mashed potatoes, cooked mushrooms, sliced tomatoes, and cheese on top of the chicken.
Bake in a preheated oven at 350-400°F (180-200°C) for about 15 minutes, until the cheese is melted and golden brown.
