Method
Pour cold water into a bowl, add salt and sugar (scoop with a heap). Stir until dissolved. Add the bay leaf, cloves, black peppercorns, and allspice.
Submerge the fillets in the prepared brine. The water must completely cover the meat. Refrigerate for 12 hours.
In a separate small bowl, mix the pepper blend with the Herbes de Provence, pour in the vegetable oil, and stir.
Remove the fillets from the brine and pat dry with paper towels. Coat the chicken fillets thoroughly on all sides with the prepared spice mixture.
Line a baking sheet with foil and place the chicken fillets on it. Preheat the oven to its maximum temperature.
Place the fillets in the oven for exactly 15 minutes. Do not open the door. When the time is up, turn off the oven. Still do not open the oven door. Leave the fillets inside until they have cooled completely.
Take the cooled meat out of the oven, wrap it in foil, and place it in the refrigerator.
The pastrami can be sliced and served on a festive table, or used for breakfast sandwiches.
