Method
Pat the chicken dry with paper towels and cut it into bite-sized pieces. Season generously with salt and pepper.
Cook in your multicooker with a splash of vegetable oil using the BAKE or FRY setting.
Peel, rinse, and chop your carrots and onions. The cut doesn't matter much—I like to grate my carrots and slice the onions into half-rings.
Once the meat is nicely browned, add your prepped vegetables and let them cook for a bit.
Rinse the pearl barley and add it to the meat and vegetables.
Taste and adjust the seasoning with salt and your favorite spices.
Pour in warm, boiled water and switch to PORRIDGE or PILAF mode. After the program finishes, I don't rush to open the lid—I let it sit for another 30 minutes. This allows the pilaf to steam through properly and reach perfect doneness.
