Cherry Jam
A thick and fragrant seedless jam that goes wonderfully with toast and pancakes. A delightful homemade preserve for the winter.

Method
Rinse the cherries, pit them, and pat dry.
Place in a pot in alternating layers with sugar. Let sit for 3–4 hours (or overnight) to release the juices.
Bring to a boil over medium heat, stirring gently. Simmer for 5 minutes, remove from heat, and let cool for 3–4 hours.
Bring back to a boil and cook for 10 minutes. Skim off any foam.
Add lemon juice if desired.
Ladle the hot jam into sterilized jars, seal tightly, turn upside down, and wrap in a blanket until cooled.
