Method

Remove the stems from the cherries and submerge the berries in cold water for a couple of hours.

Pit the cherries using a hairpin or safety pin.

Combine the sugar with the gelatin, add it to the cherries, and mix well.

Place the berries in a cool spot for 12 hours.

Set the pot of cherries, which have now released their juices, over low heat, bring to a boil, and simmer for about 3 minutes, stirring occasionally and skimming off any foam.

Ladle the berries into clean, sterile jars, seal with lids, turn upside down, wrap in a blanket until morning, and store away.
