Method
Bloom the gelatin in water and let it sit.
Put the cherries in a saucepan with sugar, bring to a simmer for a few minutes until the sugar dissolves completely, then strain off about 20-30 ml of syrup and set it aside for brushing the cake.
Mix the cornstarch with water and stir it into the pan with the cherries, stirring constantly—the confit will start to thicken.
Let the confit simmer with the cornstarch for a couple of minutes, then take it off the heat and let it cool slightly.
Melt the bloomed gelatin in short bursts in the microwave and fold it into the cherry mixture, stirring well.
Transfer the confit to a piping bag and refrigerate for a few hours to set.
