Method

Finely grate the cheese.

Add the flour, eggs, and pepper, then knead into a firm, pliable dough.

Let it rest for 20 minutes.

Dust a board with flour. Roll the dough into a log 1–1.5 cm thick and cut into pieces about 6 cm long. Bend them into horseshoe shapes.

Heat the oil thoroughly in a skillet. Carefully transfer the fritters from the board into the skillet in a single layer so they do not touch each other; the oil should cover them at least halfway.

Fry over medium heat, uncovered, on both sides until golden brown, transferring the finished fritters to a paper towel to drain excess oil.
