Method
Dissolve the yeast and sugar in warm milk. Set it in a warm place and let it rise until it forms a foamy cap. Sift flour into a deep bowl, add salt, the risen starter, and butter. Knead the dough until it's no longer sticky to the touch. Shape the dough into a ball, place it on a baking sheet lined with parchment paper, cover with plastic wrap, and let it rise in a warm spot.
For the spread, mix everything together and stir in the fresh herbs.
Once the dough has risen, punch it down and stretch it into a round flatbread. Make shallow cuts with a knife, spread the mixture over the top, and nestle cheese pieces into the indentations. Cover the flatbread with plastic wrap.
Bake at 190°C for 20–25 minutes.
