Method

Boil the potatoes until tender, transfer them to a pie dish, and press them into an even crust with raised edges. Season to taste, drizzle lightly with oil, and bake at 200°C (400°F) for 20 minutes until golden and crisp.

Sauté the chanterelles with the onions until all the moisture has evaporated. Season with salt, dried garlic, and tomato seasoning.

Whisk together the eggs, cream cheese, and spices until smooth.

Spread the mushrooms evenly into the baked potato crust, then pour the egg mixture over the top.
