Method
Dice the watermelon into small cubes.
Mix the remaining marinade ingredients together and pour over the watermelon.
Chill in the refrigerator for 20–30 minutes.
Clean the chanterelles, quickly rinse if necessary, and pat dry thoroughly. Tear larger mushrooms apart.
Finely dice the onion.
Sauté the onion in a mix of butter and olive oil until soft.
Add the chanterelles, thyme, salt, and pepper; cook until the moisture evaporates and a light golden crust forms.
Toast the challah in a dry skillet or oven, and lightly rub with garlic.
Spread a layer of cheese on the challah, top with the chanterelles and watermelon pieces, and garnish with microgreens.
