Peel the carrots and grate them on a fine grater or process in a blender. Roughly chop the walnuts with a knife and toast them lightly.

Core the apples and slice them into wedges about 0.5-1 cm thick. If they are homegrown apples, you can leave the skin on.

Beat the eggs with sugar using a mixer for 7-8 minutes, pour in the oil in a thin stream, and beat for a little longer.

Line the baking pan with parchment paper. If it's a silicone pan, you don't need to.

Mix the flour with the baking powder, salt, and cinnamon. Gently fold the flour mixture into the eggs with a spatula, followed by the carrots and walnuts (you can reserve a small amount for the top of the cake).
