Carrot Button Noodles

Method

Boil the carrots in salted water until tender, then drain. While still hot, purée them in a blender or mash with a potato masher until completely smooth.

Add 200g of flour to the warm purée and mix into a dough. If it's too sticky, add a bit more flour. If it's crumbly, add a splash of hot water.

Pinch off small pieces, roll them into balls, and press your finger into the center of each to create a 'button' shape.

Cook in boiling water for about 3 minutes (or 30 seconds after they float to the surface).

Divide the noodles among bowls and top with garlic, scallions, and chili. Pour hot oil over everything, then add soy sauce and vinegar. Toss together and serve immediately.
