Method

Wash the tomatoes and pack them tightly into a sterilized jar.

Pour boiling water over them, cover with a lid, and let stand for 15–20 minutes.

Drain the water, then add sugar, salt, citric acid, garlic, and spices directly into the jar.

Pour fresh boiling water back over the tomatoes to the very top.

Seal immediately, invert the jar, and wrap it in a blanket until completely cooled.
