Method

Blend 150g of peaches and 100g of syrup with an immersion blender until smooth.

Pour the puree into a saucepan, add 250g of sugar and agar-agar, bring to a boil, and simmer for exactly 5 minutes after boiling.

Separately, whip the egg whites with 70g of sugar and citric acid (dissolved beforehand in 0.5 tbsp of water) until stiff peaks form.

While continuing to whip, pour in the hot syrup in a thin stream and beat until thick.

Pipe the marshmallows using a piping bag of any shape, let them set for a couple of hours, join the halves together, and dust with a 1:1 mixture of powdered sugar and starch.
