Canned Peach Marshmallows

Method

Take a regular can of peaches, you'll need 150g of peaches and 100g of syrup, and blend them into a puree with an immersion blender.

Pour the puree into a saucepan, add the sugar and agar-agar, bring to a boil, and boil for exactly 5 minutes after it starts bubbling.

Separately, whip the egg whites with sugar and citric acid (dissolved in 0.5 tbsp of water) until stiff peaks form.

Pour the hot syrup in a thin stream while continuing to whip until thick.

Pipe the marshmallows using a piping bag with any nozzle, let them set for a couple of hours, sandwich the halves together, and dust with a powder mix (powdered sugar + starch 1:1).
