Method

Rinse the apricots, halve them, and remove the pits—use only firm fruit.

Bring water to a boil in a saucepan, add sugar and lemon juice, and stir until the sugar completely dissolves.

Add the apricots to the boiling syrup and cook for exactly 1 minute.

Fill sterilized jars with apricots, leaving about one-third of the space at the top, and loosely cap them.

Bring the syrup back to a boil and immediately pour it over the apricots, then seal the jars.

Invert the jars, wrap them in a towel, and let cool completely. Store at room temperature.
