Method

Wash the apples, scald them with hot water, and dry them thoroughly.

Insert wooden sticks into the stem end of each apple.

In a saucepan, combine the sugar, water, and corn syrup. Heat over medium heat without stirring with a spoon; you may gently swirl the pan instead.

Cook until the temperature reaches 293–302°F (145–150°C), the hard-crack stage. If you don't have a thermometer, a drop of syrup in cold water should instantly become hard and brittle.

If desired, add a few drops of red food coloring and stir quickly.

Remove the caramel from the heat. Dip each apple, turning it slowly to get an even coating. Let any excess drip off, then place the apples on a silicone baking mat or lightly oiled parchment paper. Leave for 15–20 minutes until completely set.
