Candied Watermelon Rinds

Method

Peel the watermelon rinds, removing the tough green skin and any remaining flesh, then cut into small pieces.

Transfer to a bowl, sprinkle with sugar, and let sit for 2 hours so the rinds release their liquid.

Put into a pot, add lemon zest and citric acid, then simmer gently for 30 minutes at a time, allowing the mixture to cool completely between sessions.

Once the syrup has reduced almost completely, drain the rinds through a sieve and let the syrup drip off.

Spread the candied rinds on a silicone mat or oiled parchment paper and dry in the oven at 60–90°C with the door slightly ajar until you reach your desired dryness.
