Method

Trim the watermelon rinds of their tough green skin, remove any remaining flesh, and cut into small pieces.

Place in a bowl, sprinkle with sugar, and let sit for 2 hours so the rinds release their liquid.

Transfer to a pot, add lemon zest and citric acid, then simmer gently for 30 minutes at a time, allowing the mixture to cool completely between sessions.

Once the syrup has reduced significantly, strain the rinds through a sieve and let the syrup drain off.

Spread the candied pieces on a silicone mat or oiled parchment paper and dry in the oven at 60–90°C with the door slightly ajar until they reach your desired level of dryness.
