Method

Peel the potatoes and cut them into thick-cut fries.

Soak them in cold water for 30 minutes.

Pat them thoroughly dry with paper towels.

Fry them in two stages using a deep fryer or deep skillet: first at 300°F (150°C) for about 5 to 6 minutes, let them cool slightly, then again at 375°F (190°C) for about 2 to 3 minutes until golden and crisp.

Season with salt immediately after frying.

Melt the butter for the gravy.

Add the flour and cook for about a minute, stirring constantly.

Gradually pour in the hot beef broth.

Add the Worcestershire sauce.

Simmer for 5 to 7 minutes until the gravy coats the back of a spoon nicely.

Season with salt and pepper to taste.

Arrange the hot fries on a plate.
