Method

Break the head of broccoli down into small florets, cutting any larger ones in half.

Prepare the custard for the gratin. In a bowl, whisk together the eggs, spices, and flour. Pour in the heavy cream and mix thoroughly with a whisk.

Add half of the medium-grated cheese specified in the recipe. Season with salt if needed, keeping in mind that cheeses are typically quite salty.

Boil the broccoli in salted boiling water for 3 to 5 minutes, then drain in a colander.

Grease the inside of a baking dish with butter. Arrange the broccoli florets in a single layer.

Pour the custard over the broccoli florets. Place the baking dish in an oven preheated to 375–400°F (190–200°C) for 15 minutes.

Take the dish out of the oven and top the gratin with the remaining grated cheese. Return it to the oven for another 10 minutes until the cheese is melted.
