Method
Core and peel the apples, then dice them. Roughly chop the walnuts.
Sift the flour together with the baking powder and vanilla sugar.
Whisk the eggs with the sugar until pale and fluffy. Pour in the vegetable oil and beat well with an electric mixer.
Fold in the sifted flour, baking powder, and vanilla, stirring with a spoon until just combined and smooth.
Gently fold in the diced apples and chopped walnuts until evenly distributed. You will get a thick batter. Line the bottom of a baking pan with parchment paper, pour in the batter, and smooth the top.
Bake at 350°F (180°C) for about 30 to 45 minutes, or until a wooden skewer inserted into the center comes out clean.
5 minutes before the pie is done, make the glaze: In a small saucepan, combine the cream and sugar, simmering for about 3 minutes (or until slightly thickened). Stir in the butter until completely melted and smooth. Keep in mind that the longer you simmer the cream and sugar, the thicker your glaze will be.
Pierce the hot baked pie all over with a wooden skewer and generously pour the glaze over the top. Let it sit until the glaze sets completely.
