Method
Melt the butter, add the flour, and mix it in well. Pour in the milk gradually while stirring constantly, and cook until it thickens into a béchamel sauce.
Toast the bread slices in a dry pan or in the oven until golden. Spread a thin layer of mustard on each slice.
Sprinkle the bread with some of the grated cheese, lay down the ham slices, and top with the remaining cheese.
Cover with the second slices of bread and pour the béchamel sauce over the top.
Bake the sandwiches in a preheated 350°F oven for 10–15 minutes until the surface turns golden.
Separately, fry two eggs sunny-side up.
Top each hot sandwich with a fried egg, season with salt and pepper to taste.
