Method
Wash the meat, pat dry, and rub with spices, salt, and minced garlic.
Lard the meat with a few garlic cloves.
Place the pork in a roasting bag and tie it tightly. For extra security, it's best to use two bags nested together.
Refrigerate the meat for two hours or overnight so it marinates thoroughly.
Place the bag in a pot and cover it with water so that the meat is completely submerged.
Bring the water to a boil and cook the meat for two hours. After the pork has cooked for one hour, flip it over and cook for another hour.
Remove the finished pork from the pot and cut open the bags to let the steam escape.
