Method

Mix half the sugar with the pectin. Add the glucose syrup to the second half. Combine the acid with water.

Heat the puree in a saucepan over medium-high heat to 40°C, then whisk in the sugar-pectin mixture in a steady stream, stirring constantly.

Cook until the first bubbles appear. As soon as the puree starts to simmer, gradually add the second half of the sugar and syrup.

Stirring continuously, bring the marmalade to 107°C, remove from heat, stir in the acid, mix well, and pour into molds.

Let the marmalade set at room temperature for at least 8 hours. Remove from the molds and coat in sugar.
