Berry Jelly

Method

Put the gelatin in a separate bowl, pour cold water over it, stir, and let it bloom for 5-10 minutes.

Add water, frozen pitted berries, and sugar to a pot or saucepan, stir, bring to a boil, then remove from heat.

Use a potato masher to crush the berries so they release their juice and impart their color and flavor to the liquid. Strain the mixture through a fine sieve to make it clear.

Taste the berry juice and adjust the sugar and flavor if needed. Let it cool for 15-20 minutes.

Stir in the bloomed gelatin and mix until completely dissolved (the juice should be around 50-60°C or 120-140°F).

Once the gelatin is fully dissolved, let the mixture cool to room temperature.

Rinse the berries and remove the stems. Cut strawberries in half or into quarters.

Arrange the berries or fruit pieces in a serving dish, pour the cooled juice over them, and refrigerate for 6-8 hours to set.
