Method
Remove the stems and seeds from the bell peppers, then cut them into strips or large chunks.
Mince the garlic finely with a knife.
Rinse the fresh dill, pat it dry, and chop it finely.
Sterilize your jars and lids.
For the marinade, combine vinegar, vegetable oil, sugar, and salt in a pot. Heat over medium-high until it comes to a boil.
Working in batches, add the peppers to the boiling marinade and cook for 3-4 minutes. Transfer them immediately to the jars, layering with the minced garlic and fresh herbs as you go.
Once everything is cooked, pour the remaining hot marinade into the jars with the peppers.
Seal the jars with lids, screw them on tight, and let cool completely before storing.
