Method

Chop the bacon and onion into small pieces. Peel the beets and grate them on a box grater.

Heat vegetable oil in a skillet and fry the bacon until golden and crispy. Transfer it to paper towels.

Add red wine vinegar and apple cider vinegar, mustard seeds, and sugar to the bacon fat. Cook, stirring, until the sugar completely dissolves.

Add the beets and onion, toss to combine, and braise for about 15 minutes until the vegetables are tender.

Remove the skillet from heat, stir in the bacon, and toss everything together well.
