Beer-Glazed Ham with Plum Sauce

Method
Preheat the oven to 320°F (160°C).
Season the ham all over with salt, pepper, coriander, mustard, and oregano.
Place the pork in a oven-safe ceramic baking dish, drizzle a little beer over the meat, and pour the rest into the bottom of the dish.
Roast the ham in the preheated oven for 4 hours, basting it periodically with the pan juices.
Pit the plums and chop them into small pieces.
Make the sauce: place the plums in a saucepan, add a splash of water, season with salt, pepper, cayenne, and coriander, stir well, and simmer until tender, adding a little water as needed to prevent scorching.
Finely chop the tarragon.
Mash the plums with a wooden spoon while keeping the sauce warm, then stir in the tarragon and remove from the heat.
Drizzle the plum sauce over the finished ham.
