Method

Whisk together the flour, salt, and sugar in a bowl.

Make a well in the center, pour in the cold beer, and add the egg and a spoonful of oil.

Quickly whisk until smooth with the consistency of runny sour cream. Lumps are totally fine!

Cover the bowl and let the batter rest at room temperature for 15-20 minutes.

Coat the fillets in the batter and fry in preheated oil at 160-180°C until golden brown.

For the sauce, combine the mayonnaise, minced cornichons, finely chopped onion, dill, lemon juice, salt, and pepper, then let it rest for 15 minutes.
