Method
Preheat the oven to 200°C (400°F). Thaw the puff pastry, roll it out to a maximum thickness of 5 mm, and cut out rounds using a glass.
Grease a baking sheet with oil, place the pastry rounds on it, brush with egg yolk, and sprinkle with minced garlic and rosemary. Bake at 200°C (400°F) for 15 minutes.
Dice the meat, gherkins, capers, onion, and tomato pulp into a small brunoise.
Combine all the tartare ingredients, add the balsamic vinegar, olive oil, egg yolk, mustard, salt, pepper, and chili, then mix well.
Allow the baked pastries to cool, slice them horizontally with a bread knife, stuff with the beef tartare, and top with the pastry lids.
