Method
Soak the bread in milk for 5 minutes, then squeeze dry and mash it up.
Finely chop the onion and garlic for a smoother, more tender texture.
Combine the minced meat, bread, onion, garlic, and egg. Season with salt and pepper.
Work the mixture with your hands for at least 3 minutes until sticky and shape-retaining.
Chill in the fridge for 20 minutes so the mixture firms up and won't fall apart when frying.
Shape into patties about 2 cm thick. Dredge in flour or breadcrumbs.
Fry over medium heat for 4–5 minutes per side until golden brown, then lower the heat, cover, and steam for another 5 minutes.
Testing for doneness is easy: press with a spatula, and if the juices run clear, they're done.
Serve with mashed potatoes, braised vegetables, or simply with bread.
