Method

Slice the beef into thin strips against the grain—the thinner the better for faster cooking. Sear in sunflower oil over high heat until the liquid evaporates and you get a nice golden crust.

Add sliced onions and sauté for another 10 minutes until soft.

Toss in the cucumber strips, season with spices, add 50 ml of water, and stir. Cover and simmer gently for 50-60 minutes. Top up with more water if needed.

For the sauce, whisk sour cream with flour, mix in some warm water, and pour into the pan. Heat for 2-3 minutes, finish with plenty of fresh herbs, and serve with mashed potatoes or buckwheat.
