Slice the beef thinly against the grain and sear it in vegetable oil over high heat until the liquid evaporates and you get a light golden crust.

Add sliced onions and cook for another 10 minutes until they're soft.

Add the julienned pickles, season with spices, pour in 50 ml of water, and stir well. Cover and braise over low heat for 50-60 minutes.

For the sauce, whisk together sour cream and flour, add warm water, mix it through, and pour it into the pan.

Warm for 2-3 minutes, finish with a generous handful of fresh herbs, and serve with mashed potatoes or buckwheat.
